What You’ll Need:
- 1 tablespoon olive or sesame oil
- 1 mild red chili, finely chopped (optional for a little kick)
- 3 cloves garlic, minced
- 1 can (400g) chickpeas, drained and rinsed
- 3 tablespoons dark soy sauce or tamari (for gluten-free option)
- 1 tablespoon honey or agave syrup
- 450g mixed stir-fry vegetables (baby corn, mange tout, yellow pepper, mushrooms, tenderstem broccoli)
- 300g fresh noodles (egg or rice noodles)
- 1/2 tablespoon sesame seeds
- Fresh coriander (cilantro), chopped for garnish
How to Make It:
- Heat the oil in a wok or large frying pan over medium-high heat. Add the chili and garlic, cooking until fragrant.
